+2 Pumpkin Chocolate Chunk Bread Of Tasting
If you've been following me Twitter, you may have seen me share pictures of my loaves. This weekend is the start of pumpkin-related baking season in my house, which means the first loaves of my pumpkin chocolate chunk bread have come out of the oven.
A number of my Twitter followers asked me to share the recipe. Though I am loathe to give away the secret to one thing that makes me special in this world, I have succumbed to their pleas.
Ingredients:
- 15 oz can pumpkin
- 1 2/3 cups sugar
- 2/3 cup vegetable oil
- 1 tbsp vanilla
- 4 large eggs
- 3 cups flour
- 2 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp baking powder
- 2 tsp pumpkin pie spice
- 1/2 tsp nutmeg
- 1 cup Nestle semi-sweet chocolate chunks
Here's how to make the magic happen:
- Preheat oven to 350 degrees. Grease bottoms only of two loaf pans.
- Mix pumpkin, sugar, oil, vanilla, and eggs. Stir.
- Mix remaining ingredients except chocolate chunks. Stir
- Add chocolate chunks. Stir.
- Bake for 60 minutes. Test with toothpick. If not done, bake for additional five minutes. Let cool.
Can be served warm or cold. Good a la mode.
