I didn't see a "don't try this at home" disclaimer, so I think I'll give it a shot. Also, it reminds me that I need to go back and finish that game.

Closest thing I've ever had to this was a 105-car chase in Need For Speed Carbon on the Wii... Killed about half of them while making a ramp jump, and *all* of them followed me. That had to be the most epic mid-air collision of all time.

I'd typically go to the nearest swing set and then proceed to launch my car halfway across Liberty City, then see what happens from there, but that was pretty cool too.

That's so weird, I just did that yesterday. Only it was in a minivan and it was an angry Schwan truck chasing me instead of the police. Not really 'like a boss', more 'like a middle manager'.
